This work was conducted to compare (non)volatile compounds and sensory evaluation of oyster cuts of roasted lamb. Three newer roasting methods, namely electrically heated air (EHA), microwave heat (MWH) and superheated steam (SHS), were compared with traditional burning charcoal (BCC).
