Chitin nanocrystals (ChNCs) produced by hydrochloric acid hydrolysis of chitin were used as stabilizing agent for oil-in-water (O/W) emulsification of soybean oil (SO), acrylated soybean oil (ASO), and epoxidized soybean oil (ESO).
