The effects of amphiphilic aldehydes, including propanal, hexanal, and nonanal, on the critical micelle concentration (CMC) of phospholipids, moisture content, and oxidative stability in soybean oil were evaluated. The selected aldehydes are typical secondary oxidation products from unsaturated fatty acids.
